Hot Water Cornbread

Ingredients:
4 cups plain white corn meal
	2 cups boiling water
	1 cup buttermilk
	1/4 teaspoon baking soda
	1 teaspoon salt

Mix the buttermilk, baking soda, and salt. Set aside.

Heat oven to 400 degrees. Pour oil or bacon fat into iron
skillet to cover bottom and place in oven.

Add boiling water to the cornmeal, a little at a time, and blend
until barely moist. Stir in buttermilk mix. If mixture is too dry,
add a little more water.

Transfer mixture into the hot skillet and bake at 400 degrees until
brown on top.
