Italian Red Meat Sauce
In a frying pan, saute 2 chopped medium onions and 4-8 cloves
minced garlic in olive oil until onions are tender. Transfer
to large stock pot with lid.
In frying pan, brown 1 lb Italian sausage. If you use actual
sausages, remove the sausage casings before browning - you
want the meat to be the same consistency as hamburger. Use
collander or wire basket to drain grease from meat. Transer
to stock pot.
Add the following to the stock pot:
1 large (16oz) can unseasoned diced/chopped tomatos
1 large (15oz) can unseasoned tomato paste
3 16oz cans unseasoned tomato sauce
1/4 cup red wine
2 tb (or to taste) Italian Seasoning
1/2 tb Fennel seeds
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp Cayenne pepper
1/2 tsp Marjoram
Bring sauce to a boil. Reduce heat, cover, and simmer at least
2 hours, stirring occasionally. Use as spaghetti sauce or for
making lasagna. Serves 6-8.
