Beef Stroganoff

	2 lb tenderloin, sirloin, or round steak
	1 large onion
	1/2 lb mushrooms (optional)
	1/2 stick butter or margarine
	1 can consomme or beef broth
	1/2 cup dry white wine
	8 oz sour cream
	Cooked white rice
	Chives or parsley

Slice the beef into bite-sized pieces. Melt butter in skillet and add
the beef, browning well. Remove beef from skillet and saute onion and
mushrooms in remaining butter until tender. Add meat, consomme, and wine.
Salt and pepper to taste and simmer, covered, for 10-20 minutes. Stir in
sour cream and heat just to boiling, stirring constantly. Serve over
white rice, garnished with chives or parsley. Makes 6 servings.
